As a native of Paris and graduate of CEPROC, European Center of Culinary Profession in France, Chef Julien Salomoni brings with him many years of international experience from pastry shops and restaurants such as Au Rocher de Cancale and Remona Café in Paris and TWG Tea in Singapore.
In 2017, he was recruited as part of the opening team for the first Canadian location of TWG Tea restaurant in downtown Vancouver. Julien later moved on to Au Comptoir, an award-winning, Parisian style bistro located in Vancouver’s popular and trendy Kitsilano neighborhood. Shortly after his arrival at Au Comptoir, Julien led his team to win the 2019 VanMag Silver Award for Best Dessert Restaurant.
In the winter of 2018, Julien’s Passion-Fruit Mont Blanc was also featured in MONTECRISTO magazine’s Vancouver Must-Eats. A true master of his craft, Julien believes in constant learning and study to keep ahead of the newest trends in baking and pastry.
