Short Programs

To inspire 'the Chef within' we are pleased to offer the following speciality short programs throughout the year:

In addition to our casual gourmet classes above, Pacific Institute of Culinary Arts also provides short career programs, workshops and continuing education classes. 

Workshops 

Master Food Styling & Photography Workshop

Recognized culinary professional and food stylist Lisa Golden Schroeder teaches this unique master food styling workshop, with recognized Vancouver food photographer Tracey Kusiewicz. With both demonstration and hands-on work, learn the nuts and bolts of what it takes to become a successful food stylist, ready to collaborate with professional photographers.

This is Lisa's second instructional class at Pacific Institute of Culinary Arts and it has been expanded to include a Friday night mixer (plus two days), to include a full day of hands-on food styling under a professional camera. Students will develop a commercial assignment, from concept and pre-production planning to the final execution of a polished food photograph. Lisa will coach students in styling technique, while Tracey shares invaluable insights about how photographers work with stylists to create mouthwatering food images for publication.

The Friday Evening Mixer and 2 day workshop outline is as follows:

Friday Evening Mixer: 2.5 Hour Session
Students gather at the Institute to meet each other and be welcomed by Lisa and Tracey. An overview of the business of commercial food photography will be presented, along with an exploration of current trends in both editorial and advertising. Lisa and Tracey will share their work and how they collaborate and communicate with clients, emphasizing the process of bringing a client’s vision alive.

Day One (Saturday: 8 Hour Daytime Session)
Lisa will focus on food styling techniques, with demonstration and hands-on practice time. Students will break into teams to develop under-camera assignments—meeting with Tracey and Lisa for pre-production planning. The day includes a visit to the gorgeous farmer’s market on Granville Island to gather groceries and props for final projects.

Day Two (Sunday: 8 Hour Daytime Session)
This will be the studio day, with a professional camera and lighting set-up. Each team will prepare food for their assignment, with Lisa coaching them on plating and composition and Tracey working with them on the finer details of how the camera sees their food. Lighting, camera angle, and other photography nuances will be explored and explained. Each student will take home a disc with a high-resolution image they helped create.

Time: 6:30 PM - 9:00 PM (Friday); 9:00 AM - 6:00 PM (Saturday*/Sunday*) [3 Classes - Total 18.5 Hours]
Cost: $925.00+ $50 Lab Fee + 5% GST [Total: $1,023.75]

Course & Lab Fee Includes: Workbook, all supplies & ingredients, PICA apron, High Resolution Professional Photograph of your finished creation and certificate of completion.

Pre-Requisite: There is no pre-requisite however this workshop is geared towards culinary professionals and students with an interest in food styling for print, television and film. It will be especially helpful for people with some experience in the food styling industry.

INSTRUCTOR BIOS:

Lisa Golden Schroeder
Lisa Golden Schroeder launched her food consulting business in 1987, specializing in food styling for commercial photography. She holds a B.S. degree in Nutrition and Food Science + an advanced diploma from La Varenne Ecole de Cuisine in Paris, France. Her styling career began in recipe/food journalism and corporate test kitchen work, but quickly moved into food photography. She maintains a successful styling and food consulting business in Minneapolis, Minnesota, but mentoring and teaching the difficult to learn art and craft of food styling is now an important part of her work. Lisa’s portal web site, www.foodesigns.com, is a vital resource for professional food stylists and photographers.

Tracey Kusiewicz
Tracey Kusiewicz is a professional freelance photographer specializing in food and beverage for the culinary & hospitality sectors. Her client base includes shooting for various magazines, cookbooks, stock, product packaging and advertising. A fundamental passion for food and art, combined with her skills and commercial training in photography, led Tracey to create Foodie Photography in 1997 www.foodiephotography.com

A love for teaching and expertise in the field has compelled Tracey to generate enthusiasm for the art of food photography. Always on the search for new epicurean explorations, Tracey welcomes the opportunity to share her zeal and  passion with fellow ‘foodies’ everywhere.

Continuing Education Classes

For professionals working in the food industry who wish to learn more. In consultation with our Executive Chef and Program Director, you design the specifics and choose the length of your customized training. Short Programs Refund Policy

If a participant withdraws 30 days or more prior to course commencement, s/he may transfer to another available class start date or receive a refund. If less than two week's notice is given, prior to commencement of the class a credit will be issued. Less than 2 week's notice the participant forfeits the total amount paid.
