"I can't let another day go by to tell you what a great time my guests and I had Friday night. I don't know if Tom told you but the five couples that we had invited had never really met each other before Friday - well, maybe a couple of the guys had golfed a game or two before hand. Well it didn't take long before Chef Bernard broke the ice when he got everyone involved with tasks at hand. Making pasta turned out to be a real hit and the crab and wild mushroom ravioli were worth all the effort! It was one big love-in at the end of the night and I can't thank you and Chef Bernard enough for ensuring that everything went smoothly and giving everyone a party to remember.  I also want to thank you for the cookbook - it's giving me some great recipes to try out. "I just wanted to let you know that both Lisa and I had the best time last night (October 2006). Chef Bernard ROCKS!!!!  We just loved him. He is an excellent teacher and the menu he chose was so perfect.  One of our favourite dishes is one that a chef does for us at lunch which is a herb encrusted halibut; we order it off the menu.  Chef Bernard had chosen a black sesame encrusted halibut; he couldn't have made a better choice for the two of us! And the curry sauce .... divine.  I can assure you that Lisa and I will be back at least once every 6-8 weeks, but only with Chef Bernard!  Adam was also excellent and very on top of keeping me in wine for the whole class, a service that was most appreciated, I assure you.  Thank you to you, Giulia, and all your excellent staff for making our first experience at Pacific Institute of Culinary Arts a most fabulous and memorable one." - Alexandra W.

" It seems as though we, the McEwen family, were with you just yesterday, but it has been over a month since that great day (August 23, 2006). Our instruction, then eating each course with good Canadian wine was perhaps the best part of our one week in Vancouver.  All four daughters have been busy using your memorable recipes. We do not have Sablefish in the Monterey Bay area however we were so impressed with it that my two daughters ordered the fish when we ate at the William Tell, as Chef Johannes suggested - excellent.
