The Wine Spirit and Education Trust (WSET) is a globally recognized wine training program that will allow participants to gain insight into the world of wine and spirits. Widely referred to as the highest standard of wine education available, Pacific Institute of Culinary Arts is pleased to offer these courses to you. Your instructor, our resident Sommelier Tim Ellison, has the distinction of being the only Certified Chef de Cuisine in Canada that also holds the WSET Level 4 Diploma of Wine and Spirits. A well-known educator and hospitality professional with over 35 years of experience, Tim brings energy, enthusiasm, and fun to all his classes.

Foundation Certificate

The Foundation Certificate is an entry-level qualification providing a straight forward introduction to wine. It is ideal for boosting the confidence and knowledge of front line staff in the hospitality and retail sectors and enthusiastic consumers who want to know more about wine.  It is also a great course for those wanting to know the main grape varieties and food & wine pairings. 

Fun, interactive and entertaining, this course will allow participants the opportunity to explore what wine is, how it is made, and the different types and styles of wine from around the world. Proper storage and service will be reviewed as well as extensive food and wine pairings. You will be introduced to the Systematic Approach to wine tasting and it will allow you to train your palate to identify the flavours and nuances of wine as well as learn how to describe wines to others.

Intermediate Certificate

The next step for those who have completed the Foundation Certificate. This program looks at, in more detail, the process of Viticulture (grape growing), Viniculture (wine making), and the various wine varieties grown throughout the major producing regions of the Old and New World. Traditional foods from the appropriate countries will enhance your pleasure and understanding of these wines. Sparkling and Fortified wines will be explored as well. A more detailed and structured approach to wine tasting will be developed and major categories of spirits will also be reviewed.

It is ideal for serious consumers and professionals alike wishing to possess a strong knowledge of the major wines and spirits of the world.
