Pacific Institute of Culinary Arts is pleased to announce the scheduling of our Fall Casual Gourmet Classes for 2008.  Don't delay as classes fill up quickly.

Dining Etiquette 101 (For Adults)

Join our very own 'Hospitality Enthusiast', Tim Ellison for an informative and fun evening of dining etiquette, gourmet food and wine. Explore the world of 'Dining Room Etiquette' and learn of it's importance in today's work driven environment. Table manners play an important part in making a favourable impression. Whether you are having lunch with a prospective employer or dinner with a business associate, your table manners can speak volumes about you as a professional. We will provide you with all of the necessary tools so that you can relax and concentrate on forging relationships and instead of worrying about which fork to use. The evening is fast paced and enjoyable. Your new skills will be implemented on the spot while enjoying a gourmet four course meal with matching wines.

Cost: $150.00 per person + GST

Knife Skills 101

Need to learn or brush up on your knife skills? Do you have a beautiful knife set at home -- and have no idea how to use them? Give us two hours and our Professional Chef Instructor, Bernard Mouze will teach you the basics, including:

  • Knife Sharpening
  • Classic & Uniform Cuts
  • Knife Handling & Safety

Bring your own knife set to the class or we will provide them for you. Chef Bernard will also provide tips and advice on purchasing the perfect knives for you.

Sushi 101

Master Sushi Chef & Professional Chef Instructor to our advance culinary students, Chef Katsuhito Inoue, will demonstrate the fine art of sushi making.

The following will be covered:

  • Cutting & Preparation Techniques
  • Sushi: Sashami, Maki & Nigiri
  • Sushi Rice

There are no prerequisites for this beginner sushi class.

Cook! and the City (For Singles)

Join our fun-loving group of singles along with our Chef Instructor, Simon Manvell and Wine Enthusiast, Tim Ellison for an exciting Friday night designed around Spanish Tapas and wine pairings. Chef Simon will inspire new techniques and recipes while Tim will work his magic with wine.

Sip on wine and enjoy some great company while you savour a great meal that you will be preparing.

Stocks & Sauces

Get ready to take your cooking to the next level!

One of the fundamentals skills in cooking is the preparation of stocks and sauces. Learn the 'mother sauces' (espagnole, béchamel, Velouté, hollandaise, tomato) and how you can create your own sauces with this basic fundamental knowledge.
