Best Dessert - Healthy Chef Competition
On Wednesday, March 17th a team of four Culinary and two Baking & Pastry Arts students from Pacific Institute of Culinary Arts participated in the 11th Annual Healthy Chef Competition at the Hyatt Regency Hotel. Invited participants, which included both culinary students and seasoned professionals, were required to create two dishes incorporating a minimum number of vegetables and fruits and prepared in a manner that is healthful. Our students really delivered, getting rave reviews on local blogs for both their entrée (Mushroom-Smoked Sockeye Salmon Cured with Birch Syrup) and dessert (Blueberry & Lemon-Basil Mousse Cake). The students had a great time getting creative with their healthy recipes and the hard work really paid off – they took home the trophy for Best Dessert of the night!
Quady Winery Competition "Top Student" Award
Baking & Pastry Arts student, Alice Wu, accepted her award as Top Student in the 22nd Annual Quady Dessert Competition at the Vancouver International Playhouse annual awards luncheon on Friday, April 23rd. The industry only event honours the best Wine Lists, Sommeliers, Industry Professionals and the best dessert pairings with Quady’s popular dessert wines. Alice represented PICA at the competition held last month where she presented her stunning Blackberry & Cherry Mousse amongst other culinary schools and some of Vancouver’s top Pastry Chefs.
