Spot Prawn Season is here!

posted on May 16, 2013
We LOVE this time of year. What could be more exciting to culinary students than heading out the back door for a short stroll to the wharf and returning to kitchens with a crate full of live, beautiful spot prawns to cook with?

Spot prawns are only available a short time each year, and we make sure our students get the chance to work with these amazing local and sustainable little delicacies while they can.

Want to learn more about the spot prawns and get some tips on how best to prepare and enjoy them? Check our our Executive Chef Julian Bond's recent appearance on BC Global's Saturday Morning News:

From the Cubicle to the Kitchen

posted on April 26, 2013

Kitchens are a great place to learn the importance of teamwork and communication and PICA has been successfully hosting corporate team building events, classes and competitions in our professional kitchens for over six years.

We often get emails from clients raving about their events, but this photo video montage from JIBC was an exceptionally nice way to see how much fun team building can be. Click the image below to see for yourself!

A big thank you to Dennis for sharing his fabulous photos from their event.

PICA Student Competes in Toronto

posted on March 25, 2013
On February 25th, PICA student, Kevan Hafichuk, travelled to Toronto to represent the Institute at the S. Pellegrino Almost Famous Chef competition. This annual competition hosts regional cook off's around the US and Canada for a chance to attend the finals in Napa Valley, California.

Kevan worked hard to perfect his dish and practice for the intense competition. Though he didn't win a spot in the Napa finals, his dish was well received and his Chef Instructors were proud of his accomplishments throughout the competition.

Congratulations to Kevan and all the Canadian competitors for the Almost Famous Chef Competition!
