My brother and I worked with Chef Kristin who was professional, well-prepared and friendly. We also had Laura doing prep-cleaning and assistance for us. She was always there with answers to our questions and yet almost invisible. The menu was beautifully designed in terms of interest, creativity, challenge and taste. It was as good to eat as it was to prepare. It's a delightful way to get to know other cooking enthusiasts. The happy cook in me wishes that we had had more time to chat with all the chefs as we enjoyed dinner but I realize they had their hands full! "Thank you for the email and the opportunity to provide feedback on the Basics in 8 series.

First, I want to thank Chef Darren, Chef Bernard, Chef Alfred and Chef Kristin for an amazing experience. Their passion for food and their own discipline made the classes enjoyable and their patience greatly appreciated... especially when they were made to repeat things 3 or 4 times so we can write it down or the endless questions we kept asking... I think our Butchery class could have lasted a week and I would still have a lot to learn from Chef Bernard.
 
I enjoyed all the classes. My favourite part of each class is the hands on exercises. For the record, I did not cut myself in any of the classes =) Yea, Chef Darren for teaching me how to handle a knife. I really like the part where we got to eat our "projects". The handouts with recipes that came with each class are a great take away and I have been using them at home. I also enjoyed the progression of the classes, it made a lot of sense... starting with salads, leading to the mains and ending with pastries.
 
Overall, it is a really good series of classes and I have already spread the word to my friends about how great the Chef instructors and classes are. I think my next challenge would be to go for the full on professional Culinary Program... not sure how my boss would handle that news right now." - Lyna (September - November 2012 | Basics in 8: A Culinary Skill Building Series) 
 
"My mom, Arleen, and I were on the tour with Chef Julian on Friday and I wanted to extend a sincere thank you for an all around lovely, lovely day.  
 
We started the day with a coffee and snack in your café (yum) and the tour was so interesting and fun (I could have asked a million questions but I knew we had a schedule – I told my mom I sure wish we were at a dinner party with these guys because I'm sure it would be a lively and interesting discussion!  And I would definitely have lots of questions to keep the conversation going!) and then the lunch at your restaurant (Bistro 101) was fantastic!
 
All in all it was an A+ day, you guys have a great thing going over there – my mom is going to make sure that my brother's kids are in the young school classes next year I'm sure it will be a very, very memorable experience for them.  And my mom and I are secretly but consistently pushing my nephew, Brett, towards a career with food because he is naturally very interested in it…we'll see.  It would be cool to have a great chef in the family!
 
Anyhow, you guys are also very lucky to have to go to work every day on Vancouver's Granville Island.  Man, that must be rough!

"Excellent! The Chef Instructor and Sommelier were very fun, friendly and free with techniques and processes to share with the group. The course content was well thought out and prepared perfect!  Recipes/menu was a good mix of dishes however would be better if the recipes were a bit more complex but given the time allowed simple is better! Considering the expensive menu ingredients and the wine, cost is a very good value!!  I am planning to put together a team building session within our company like Iron chef or a cook-off sort of thing which might and could expand into a company wide customer appreciation competition….will keep you posted!" - David P (Cook! and the City - Italy / April 2009)

"The participants were made to feel very welcome....it was our evening.  Wonderful ambiance created with the candles, starched linen, powerpoint, music, Italian display, etc.  Made me want to go back to Italy. Having it on a Friday was also a benefit. (Geared us up to shop at Granville Island the next a.m. for ingredients).  I have told several people about what a wonderful evening I had, and they are all set to sign-on in the future.  Also, having a parking spot made available was a plus, expecially for the ladies in the class. "I just completed the Artisan Bread Class, and want to pass along my comments.  For years, I have been asking that you put on a short bread making class for the home baker, and this one was everything I was hoping it would be.  Alfred is a wonderful teacher, friendly, knowledgeable, and supportive.  We made an astonishing number of breads, all of which turned out well.  More importantly, I learned a great deal about the bread making process which I will put to good use in my home baking.  I have taken cooking classes such as those offered by other organizations, but as this was hands-on, it was very much more effective.  It would be hard to think of any changes that I would recommend.
