Pacific Institute of Culinary Arts is pleased to offer the following classes to our casual gourmet clients:

Artisan Bread Making - SOLD OUT!

Master Baker & Chef, Alfred Voss, will demonstrate the tools and skills needed to create beautiful artisan breads in our hands-on Artisan Bread Making class.  A variety of delicious and creative breads will be covered.

Date: Saturday, May 10th, 2008
Time: 10:00AM - 2:00 PM (1 Class - Total 4 Hours)
Cost: $125.00 per person + GST

Includes: All supplies & ingredients, a Pacific Institute of Culinary Arts logo apron, certificate of completion and your very own creations to take home after the class.

Mothers Day Tea (for kids aged 6-10 years)

This is a special day for moms and kids alike.  First, kids will be busy in the kitchen making lemon iced scones, finger sandwiches, and decorating shortbread cookies for dessert.  After the class, Moms will join them in our fine dining restaurant as guests of honor at this Mother's Day Tea, in which they will sample the freshly baked fare and enjoy a little tea-time with their children.

Time: 12:00 PM - 2:00 PM (1 Class - Total 2 Hours)
Cost: $50.00 per child + GST

Includes: All supplies & ingredients and tea service.

Fathers can join this special event for a nominal charge of $25 plus GST.

Baking with Ancient Grains - LIMITED SPACES LEFT!

Join our Master Baker & Chef, Alfred Voss, for this baking class and learn to incorporate different grain flours into you baking regime! Get to know barley, spelt, kamut, millet, quinoa and flax seeds.

Martini Madness

Join our vendor/partner, Mix Bartending for an evening of martini education and appreciation.

  • Learn about martini mythology
  • How to make martinis
  • Pair 3 martinis with a 3-course small plates menu, prepared with our very own, Executive Chef, Julian Bond

Menu:

Appetizer: Roasted Spot Prawn with Hot and Sour Cucumber Salad paired with Sake & Cucumber Martini

Entree:  Prime Rib-Ribs, Sweet Corn Succotash paired with Wild Berry and Rosemary Martini

Dessert:  A Trio of Chocolate ‘Shooters’ paired with Caramel Macchiato Martini

Chocolate Truffle Workshop

Join our Master Pastry Chef, Kurt Ebert, in the fine art of chocolate truffle-making.

The following items will be covered:

  • Introduction to Chocolate Truffle-Making
  • Preparation of 3 Ganaches (dark, milk, white)
  • Basic Fashioning & Finishing Techniques (drizzle, dip & patterned transfer sheet)
