Bob Foulkes is a different kind of kitchen wizard, although there were moments in the last few years when he would have happily traded chefs' whites for Harry's wand.

The Professional Culinary Centre @ Pacific Institute of Culinary Arts is pleased to offer teen classes with an emplasis on hands-on training for culinary, baking & pastry arts and restaurant server programs.
“Tim Ellison, our instructor, made the class fun and interesting. I really enjoyed learning many different serving techniques. We learned many things, such as how to hold multiple plates, which hand to use when serving, and open arm service. I found it very interesting when we learned the history of fine dining, as well as the advantages of working in different types of restaurants. In addition, I enjoyed working in the front of house with Adam and as well as with the other students. We received hands-on training, sat guests, and even booked reservations. As well, I really had a lot of fun working in the back. I met chefs, learned detailed information on the many types of service, and heard stories from Chef Tim’s many experiences. Finally, I would definitely recommend this camp to anyone interested in this industry.” - Dylan (Teen Restaurant Server Program | Spring Break 2012)
"I really enjoyed the whole course because I was having fun from actually working to just sitting and learning about the history of restaurants. Tim is a very fun and energetic teacher that does not like to slow down and is very kind at times. I would suggest this course for anyone that is looking for good training. Overall it was a amazing experience and I would gladly do it again." - Dane (Teen Restaurant Server Program | Spring Break 2012)
"This server program is an overall fun and incredibly helpful class, which is very much a worthwhile experience. The chefs were all incredible, and the staff were all super nice and helpful. There’s lots of information on the basics of table service, as well as an actual chance to try these skills out and improve. Overall, I highly recommend this class." - Tova (Teen Restaurant Server Program | Spring Break 2012)
